Coated Double What does double-coating the chicken mean?
I've been looking for KFC-like recipe. Most recipes I've found mentioned double-coating the chicken. What does that mean and how do you do it?

Double coating is simply dredging the chicken twice. I Marinate mine in Buttermilk with a tbls. of old bay seasoning for 2 hrs. then put 2 cups of a/p flour in a paper sack along with 2 tblspoons of salt and 2 tsp black pepper. go strait from the buttermilk to the flour and shake vigoursly to evenly coat the chicken. Allow to rest about 45min. then in a dutch oven about 1/2 full of oil heated to 350-360 deg f. fry about 20 min. internal temp.165-170 deg . It aint the Col. but he would be proud to eat it and the coating is the same as the original reciepe.
